I can't say I ever really hated greens, just certainly wasn't getting enough of them. For years I thought the only way to eat greens were by eating fresh salads. I struggled on many occasions trying to pick between a salad or having a hardy meal.
Once I learned the "Real" importance of greens, and lack of them in my diet, I started packing them in almost EVERYTHING I make.
Here's a few of my favorite places to sneak in kale, spinach, arugula and collard greens, without even altering much of a taste difference to your recipes.
Smoothies: Pack 1 - 2 cups of your choice greens and eliminate some of the fruit. Great way to start the day!
My Go To Smoothie Recipe
1 medium banana
1 Cup packed Kale
1/2 Cup frozen fruit of your choice
1 Cup Almond Milk
1 Cup Coconut Water
1 Tsp. Bee Pollen
1 Tbsp. Flax Seed
2 Tbsp. Protein Powder
Blend well in a high powdered mixer, pour into glass and enjoy!
Kale Chips: Heavily lay out kale leaves on a cookie sheet (stems can be included), drizzle with olive oil, sprinkle on some sea salt and bake @ 400 for 10-13 minutes. Kids love them!
Pastas & Rice Dishes: Add in greens, mix in well after rice or pasta is cooked and before serving. No need to boil or steam, they will soften up.
